THE PASTA MAKER
The art of kneading by hand: a demanding job that requires manual skill, an ancient job that gives a lot of satisfaction and of which we have an excellent representative in Quartu Sant'Elena.
It's Teresa Longoni: on her wooden table she puts her hands into the dough to give shape to malloreddus, fregula and ravioli but also to the many types of traditional Quartese desserts that she offers in her laboratory and shop in via Roma 80 in Quartu Saint Helena.
Ingredients and tools in hand, Teresa will show us how to prepare our "malloreddus" and "sa fregula" to perfection.
